A Kingston Kitchen
Rosemarie grew up in Kingston, Jamaica, where the kitchen was the center of everything. That instinct to feed people well — with rice and beans in coconut milk and neighbors pulled in by the smell — never left her.
The Real Thing
When Rosemarie brought her family recipes to New Jersey, she didn't adapt them — she cooked exactly as she learned, using farm-fresh herbs and vegetables, every dish made from scratch. This isn't Caribbean-inspired. It's the real thing.
Dishes That Earn Regulars
The oxtails have earned a near-legendary reputation across Union and Essex Counties, with guests coming back multiple times a week. The jerk chicken, curry chicken roti, and Jersey Chicken are just as satisfying — every plate is a full meal.
From Roselle to Vauxhall
Cool Runnings started in Roselle and grew to a second location in Vauxhall because the community demanded it. Breakfast through dinner, six days a week — a rarity for a Jamaican restaurant.

The food truck has rolled through street fairs, the catering calendar fills every holiday season, and first-timers have a habit of becoming regulars after just one visit.
